A Healthy Snack

After a long training day during the holidays, there’s nothing better than nesting in the warmth of your couch and binge watching an entire season of your favorite TV show. Finding the right, healthy snack that you can eat guilt-free is always the challenge of the season.

I’ve always been a fan of the sweet and savoury combo. What can I say, I can’t make up my mind. Cue in my latest discovery: honey drizzled cinnamon popcorn. You get both sweet and salty components, as well as the satisfying crunch. It’s super easy to make and lasts for a couple days, if you don’t eat it all in one sitting.

Honey is a great substitute for sugar because sugar can encourage weight gain and increases your risk of type 2 diabetes. The health benefits of honey include vitamin B and C, enzymes, amino acids, minerals, and antioxidants. Many of the antioxidants in honey are classified as flavonoids that have anti-inflammatory properties. The cinnamon is a nice holiday touch.

Cinnamon Honey Popcorn

¼ cup olive oil

½ cup of popcorn kernels

3 tablespoons of cinnamon

4 tablespoons of honey

½ teaspoon salt

Directions

Heat oil and kernels over medium low heat in a pot with a lid.

Once the kernels start to pop, give the pot a good shake every few seconds, so that the popcorn doesn’t burn. Once the popping slows to a minimum, remove the pot from eat and transfer the popcorn into a large bowl.

I like to microwave the honey in the microwave for 15 seconds, so that it liquefies. Take a spoon and drizzle the honey over the popcorn. Mix in the cinnamon and salt as well. Add extra as desired.

(Add butter or coconut oil for that extra buttery flavor.)

Enjoy!
